Steps for Completion
Turn on the oven to 350°F before you start cutting so its preheated by the time you are done.
Cut the chicken in half width wise so there will be two large chunks instead of two thin fillets.
Put the chicken in the Pyrex casserole dish and generously sprinkle your seasoning on top. I like to crowd the pan with chicken so you can barely see the bottom of the pan. Don't put chicken on top of each other though.
Put the chicken in the oven once it is preheated. Check the internal temperature of a thick piece after 15 minutes. Once the chicken is at 165°F then it is done. If it is around 100°, check on it again in 10 minutes. If it is at 130°, check on it again in 5 minutes. Chicken breast cooks pretty fast. Total cook time should not be over 25 minutes.
Let it cool for 5 minutes after you take it out of the oven, or don't. I don't care.
